From a linguistic standpoint, GuòZǎo can be directly interpreted as “to pass through the morning.”
Located in central China, Hubei is dotted with lakes and crossed by the Yangtze River, making it an important commercial port hub since the late Qing dynasty. And therefore, a distinctive breakfast culture has emerged in Hubei — GuòZǎo has become the essential meal that sustains dock workers through hours of heavy labour before lunch. This carb-heavy, boldly seasoned, and oil-rich meal helps workers eat more, fuel up, and power through a long, demanding day.
As time went on, people from both the north and the south, each with their own tastes and food traditions, converged in the same place, allowing Hubei’s vibrant GuòZǎo culture to develop and flourish. GuòZǎo is no longer just a quick meal to fill the stomach but has become a way to start a new day.
